I just wish I lived closer to this in WI. It is wonderful. The texture is quite different.

The Merlot Bellavitano is a fantastic cheese - has the granular texture of a parmesan with the rich flavor of a sharp cheddar. We had a half-round of this cheese at our wedding reception and our guests were raving about it for months afterward. Highly recommend!
